Arrowroot starch, commonly known as arrowroot powder, is a powdered substance derived from the roots of the arrowroot plant (Maranta Arundinaceae). The powder comprises starches (e.g., amylose), proteins, and minerals such as sodium, potassium, magnesium, iron, calcium, and zinc. Gluten-free. The powder appears fine and white with a particle size of 100% through 40 mesh.
Not soluble in water.

Arrowroot plant roots (Maranta arundinaceae) are the raw material source.
Before extracting the starch, the roots are cleaned and scales removed to prevent unpleasant flavor. The roots are crushed in mortars, producing a milky liquid that is passed through a coarse cloth. The insoluble, pure starch settles to the bottom and is dried into a fine powder.
